692. Slow Cooker Chicken Barbecue


Having discovered the wonders of a slow cooker (aka crock pot), I just had to make this recipe.

If you use bottled barbecue bbq sauce, this recipe would be two ingredients: the chicken and the bbq sauce.
I however, have the perfect bbq sauce recipe (from here), and it's really easy to make, so I just made it myself.
All you do is put everything in a cold slow cooker, set it on low for six an a half hours, broil to crisp up the skin, and you've got yourself a meal.


Ingredients:

1 chicken

For the barbeque sauce:
1/2 cup ketchup
1 teaspoon hot sauce
1/3 cup cider vinegar
3 tablespoons Dijon mustard
3 cloves garlic, minced
1/2 cup light-brown sugar
1/4 cup molasses (or honey)
1 onion, finely chopped



Method:

To make the barbeque sauce, put all the ingredients in a saucepan, bring to the boil, simmer for 5 to 7 minutes.
Cut chicken into 8 pieces; place skin-side up in slow cooker.
Pour the barbeque sauce over the chicken and stir around.
Cook on low for 6 hours. Broil in an oven to crisp up skin if necessary.
Serve hot.
