572. Lemon Poppyseed Cake Pops


These cake pops are economical creativity at its best.

I had some three-day old lemon poppyseed loaf cake that was just sitting around.
I had made two loaves, so the second was yet untouched.
Although perfectly edible, it was starting to take on a stale tinge.
It was then that the idea come to me: this is perfect for cake pops!
Simply whizz the cake in a food processor, add a couple of tablespoons of milk or cream, roll into balls, and done! Some recipes even use cream cheese or frosting.
They were gone within the day they were made. Mission accomplished, I would say.


Ingredients:

1 batch day-old lemon poppyseed cake
2 Tbsp whipping cream


Method:

Slice the cake and pulse till crumbled in a food processor.
Add the two tablespoons of cream, and whizz again until a thick paste is formed.
Roll the paste into bite-sized balls and chill before serving.
