27. Banana Cake Cookies


These cookies are deserving of their name, because although the are of the shape and proportions of cookies, they are actually very cakey and soft in texture. This cookie is great as is, or you may add your choice of that extra ingredient: nuts, or chocolate chips, or fresh berries, or dried fruit...
I had some dried blueberries on hand therefore added that. Also, to dress-up the cookie, you may decorate it with drizzles of melted chocolate, white chocolate in my opinion goes best.
In short, this recipe falls under my favorite category: it is versatile, and does not limit you by rules, techniques, or laser-cut direction.

Ingredients:

1/2 cup butter, softened
1 cup brown sugar
2 eggs
1 cup banana, mashed
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cloves, powdered
*1/2 cup dried blueberries



Method:

Preheat oven to 350°F.
Cream together the butter and sugar.
Add the eggs and banana, mix well.
Add the sifted flour, salt, baking powder, and cloves; mix well.
Mix in the half cup of blueberries (or anything else suggested in the introduction above.
Drop by teaspoonfuls on a non-stick baking sheet.
Bake for 12 minutes.
Allow to cool if you choose to decorate with chocolate or frosting.
